Formulation, ratio optimization, and the effect of hydrocolloids on the quality of rice noodles, Research shows a rise in celiac disease due to gluten consumption. In Nepal, I created gluten-free noodles from local rice to offer a healthy option for those unable to have noodles made from white wheat.
