- managed 20 plus employees while working with the ITA to sponsor them to become red seal cooks
- Did scheduling, food costing, labor costing, and inventory
- Made sure to operate under food-safe standards and kept an always updated HACCP booklet that all staff had to read and understand
- modernized the menu and systems in place to turn a profit after overhead
- worked with local restaurants and the community to build up a solid foundation the new owners kept going even until this day
