I am responsible for the total operation of the food & nutrition service department, department operation, staffing, supervision, hiring, staff training, in-servicing, performance review, food purchasing, receiving, and storage.
Comply with state and federal regulations, policies, and procedures. MDSs, care conferences, weight meetings, QAPI, resident council meetings, work with RD to carry through recommendations, complete residents' dietary profiles, nutritional screening, quarterly notes, and annual reviews.

I was responsible for the main kitchen and 1 satellite kitchen. Responsibilities included food and labor control, orientation and training of dietary staff, sanitation, and meal preparation for both kitchens and menu planning.
