Head Bartender

Barrio Cerveceria
  • Barrio is a Mexican-themed taqueria
  • It is bright, loud and fun environment, and a surprisingly big venue
  • Main bar featured a dozen seats at the bar, while serving a restaurant of 35 seats and a large heated and covered patio containing 60 more
  • There is also party room upstairs, but with designated bar of its own it was generally not the responsibility of the house bartender
  • Barrio’s signature was its cocktails, so service rarely included pouring beers, but instead producing cocktails en masse with accuracy and speed; efficiency was required

Chula Taberna Mexicana
  • Another Mexican taqueria, but more designed around having a small food menu in an attempt to get food to the table quicker
  • The ethos of the restaurant relied more around flipping tables quickly and getting more guests into the house as a way of combating lower average cheques
  • As a bartender this meant, again, speed and efficiency were paramount
  • Chula is also a large establishment, (in the summer with the addition of a large patio space,) and relies heavily on their cocktail sales
  • While they do carry a larger list of beers on tap, they also have a long list of house cocktails with an even longer list of homemade syrups, all made and prepared in-house.

El Catrin Destileria
  • El Catrin sits at the heart of the distillery district
  • It is a picturesque Latin restaurant that is built around traditional, but also modern Mexican cuisine
  • It prides itself on its ambience and it’s vast tequila and mezcal menus
  • It is a massive restaurant which can sit upwards of 200 in the summer months with full utilization of its patio outside, as well as its bodega indoors
  • With such an expansive location, being able to handle your own clientele is important, but also being able to work as part of a team as there are so many moving parts in a system as large and complex as the Distillery Restaurant Corporation team is
  • The key here was not only service skills, but a wide knowledge of the menu as well as the back-bar
  • Precision and time-management were integral.
