Monitor the sanitation team to achieve the highest level of micro and pest control
- Oversee daily sanitation activities; perform inspection by GMP and SQF
- Test the potency of sanitation chemicals and perform pre-operational swab sampling
- Perform chemical testing to find out bone particles in finished mechanically separated meat products as part of CCP monitoring
- Monitor critical control points and other quality control parameters during production to ensure expected quality and safety of food
- Participate in to development, update and maintenance of SOP, SSOP, and other written programs in compliance with the CFIA FSEP program and SQF
- Analyze % gas required for MAP (modified atmospheric pressure) packaging of finished meat products
- Perform % FAT analysis of finished and raw meat products to ensure the proper amount of fat as per the daily recommended use.
- Audit and report noncompliance, find out the root cause, and implement corrective action to ensure food safety
- Carry out daily post-sanitation and pre-operational inspection pertaining to HACCP programs
- Manage priorities, optimize working methods, participate in root cause analysis, and share ideas to prevent recurrence
