Adrian Estrada

As a General Training Manager for El Pollo Loco, My role centers around developing strong restaurant operations, coaching leadership teams, and driving consistency in execution across all areas of the business. I am responsible for identifying operational gaps, creating action plans, and training managers and team members on company standards related to food safety, cleanliness, speed of service, customer experience, and overall restaurant performance.

A key part of my position involves hands-on leadership development. You work directly with General Managers, shift leaders, and crew members to strengthen their operational knowledge, improve decision-making, and build accountability within the restaurant. This includes coaching managers on scheduling, labor management, inventory control, opening and closing procedures, food quality standards, and effective shift execution. I also provide real-time feedback and performance evaluations to ensure continuous growth and development.

In addition to training, I play a critical role in restoring and maintaining operational excellence. I assess restaurant behaviors, identify inefficiencies, and implement systems that improve productivity, communication, and team structure. My focus is not only on immediate execution but also on creating long-term sustainability by developing future leaders and reinforcing company expectations daily.

As a General Training Manager, I am expected to lead by example through strong operational discipline, professionalism, and accountability. You help create a culture centered around urgency, teamwork, cleanliness, food safety, and guest satisfaction while ensuring restaurants are fully prepared to meet company standards and performance goals.
