I have always been passionate about global food culture, which led me to study Food and Life Science at Kangwon National University in South Korea. During my studies, a trip to Europe helped me realize that beer is more than just an alcoholic beverage—it is an essential part of daily life and culture. This experience inspired me to pursue brewing as a profession.
To gain hands-on experience, I worked as an Assistant Brewer at Squeeze Brewery for over a year, where I learned about beer production, fermentation management, quality control, and packaging. However, I felt the need for deeper knowledge in brewing science, which led me to enroll in the Brewing and Brewery Operations Diploma program at Kwantlen Polytechnic University (KPU) in Canada.
I believe my curiosity, adaptability, and commitment to learning have driven my journey. My meticulous and responsible approach has allowed me to not only perform brewing tasks but also understand the scientific principles behind them. Moving forward, I am eager to expand my expertise and take on new challenges in the brewing industry.
As an Assistant Brewer with over a year of hands-on experience, I have developed expertise in various stages of the brewing process, from wort production to packaging. Operating a Schulz brewing system with a 50 hL batch capacity, I managed continuous brewing operations, ensuring efficiency and adherence to standard procedures.
I played a key role in fermentation management, actively monitoring and adjusting fermentation parameters such as temperature, Plato levels, and pressure to optimize yeast activity and achieve the desired beer profile. I maintained strict control over fermentation tank conditions and ensured product consistency in bright beer tanks through proper conditioning and carbonation adjustments. Utilizing an Alfa Laval centrifuge, I was responsible for the filtration process, improving clarity and stability.
Additionally, I conducted quality control assessments using Anton Paar equipment to measure alcohol content and CO₂ levels, ensuring consistency in every batch. My role also extended to the packaging stage, where I learned and implemented canning and kegging processes, maintaining product integrity and efficiency in distribution.
Furthermore, I gained hands-on experience with CIP procedures, ensuring the sanitation of brewing equipment using caustic, acid, and peracetic acid solutions. By following strict sanitization protocols, I helped maintain hygiene standards, prevent contamination, and ensure optimal brewing conditions across all equipment.
Through these responsibilities, I honed my skills in precision brewing, process optimization, quality assurance, and equipment sanitation, contributing to the brewery’s overall production success.
